We are Stereoscope, a roasting company located in Los Angeles, CA. We appreciate coffee as a seasonal crop grown and crafted at the hands of people. It is our role as caretakers to allow every coffee bean to reconnect with the flavors of its terrior, recognize the beauty in diversity and acknowledge our own interconnectedness with nature. Coffee Name: Cerrado Select
Origin: Brazil
Producer: Local Smallholder Farmers
Elevation: 750-110 masl
Process: Natural
Variety: Catuai, Mundo Novo & Topázio
Tasting Notes: Mulberry, Strawberry Compote, Jammy, Rosemary

Coffee Description: This lot comes from many smallholder farms across the Cerrado Region. Cerrado is a vast ecoregion of tropical savanna in eastern Brazil, spanning across multiple states — accounting for 21 percent of Brazil’s land. Coming from a region known for larger lots, this coffee was selected as an elevated stand out, boasting flavor atypical of much of the coffee from this region.

Brewing Description: At our shops, we use larger portafilter baskets and use a 22g in, 46g out, 32sec recipe. For subscription users, we made the 18g in, 40g out, 26sec recipe. We then took that 18g recipe and used the same ratio (or close to it) to make the 17g dose and 14g dose recipes for those with smaller portafilter baskets. The ideal recipe will change as the coffee ages. We change our parameters frequently, don’t hesitate to adjust too!

Coffee Name:  Dung K’no
Origin: Vietnam
Producer: Local Smallholder Farmers
Elevation: 1500 masl
Process: Anaerobic Natural
Variety: Catimor
Tasting Notes: Watermelon Candy, D’anjou Pear, Creamy, White Tea

Coffee Description: This coffee comes from farmers in the village or Dung K’No—40km away from Dalat. These farmers are part of one of many ethnic minorities in Vietnam, known as the K’Ho people, a matriarchal community. They were initially a nomadic people, but have now settled in the mountains of Lam Dong province. Coffee farming is a very important aspect in maintaining their livelihood.
