For the month of May, we picked a roaster that embodies warmth, creativity, and long nights playing games with friends. Mythos Coffee was started by Sam Hays and is based along the 100-mile stretch of coastline in Northwest Florida known as the Emerald Coast.

Mythos is a storied name, and at La Marzocco we especially love a good story. This roaster sees myths, in any culture, as stories that explore the deeper meaning of “why.” Mythos aims to uncover the story behind every coffee, starting with the hands of the farmer and following the journey through producers, exporters, importers, roasters, and baristas, all the way to you. As Sam puts it, “That journey is a story, a grand mythos worth celebrating.” With thoughtful sourcing, purposeful roasting, and a clear respect for the craft, they create coffee that feels alive, memorable, and full of character, just like Florida itself.

We chose Mythos because their coffee makes us remember why we love coffee in the first place. It is thoughtful, delicious, and full of personality. To us, this one tastes like sunshine.

Description: On the surface, Argo is designed to be Mythos Coffees’ most versatile and approachable coffee, welcoming anyone at any point on the coffee spectrum. It’s always a medium roast blend of natural and washed coffees, crafted for balance, clarity, and everyday enjoyment.

The nerdy backstory behind the name comes from the philosophical thought experiment “The Ship of Theseus” from Greek myth. The idea goes like this: if a single board from Theseus’ ship rots and is replaced, is it still the same ship? What if every board is replaced over time, is it still the Ship of Theseus? And if all the original boards were restored and rebuilt into a ship of their own, which one is truly the original?

This same philosophy can be applied to the coffee Argo. Depending on the harvest season, one coffee in the blend may be swapped for another, but it’s still Argo, a constant identity built from ever-changing parts. The name itself comes from Theseus’ ship, a fitting symbol for a blend that evolves while staying true to its core.

Tasting Notes: Florida Oranges, Sun Dried Raisins, Milk Chocolate
Description: Perfect for an iced drink on warm sunny days. Florida Weather is a citrus forward
blend of natural and anaerobic-natural coffees. It’s a little more adventurous than Argo, and a
touch lighter in the roast profile while still being engineered toward espresso.
