SPICED DRINKING CHOCOLATE WITH ESPRESSO

Spice up your holiday drink menu with this delicious take on a hot cocoa. Dutch cocoa, cayenne, and espresso combine sweet, spice, and everything nice to warm up on a cold holiday morning.

The Recipe


BASE:


20oz whole milk
60-70g high quality dark chocolate, chopped
2 tbsp Dutch process cocoa powder
2 tbsp muscavado sugar
Small pinch ground cayenne to taste
1/8-1/4tsp cinnamon
One vanilla bean, scraped. (can sub 1/4tsp vanilla extract )
Large pinch of sea salt.


Combine milk, sugar and salt in a small sauce pot and slowly bring to a simmer. Stir in chocolate, cocoa powder, spices, and vanilla seeds and stir gently until chocolate is melted.


Blend with immersion blender for best results. Alternatively, whisk vigorously by hand and strain to remove any clumps.


ASSEMBLE DRINK:


Split a double espresso between two, 6-8oz cups and ladle drinking chocolate over the top.


Garnish with marshmallows.
