La Marzocco is excited to embark on a new month with you and our special guest—an adventurous coffee roaster with a passion for travel. Meet Ally and Casey, the founders of Canyon Coffee, who started their journey in 2016, roasting coffee in their cozy Los Angeles apartment. What began as a small operation quickly grew into a local favorite with neighborhood coffee pop-ups, and today, Canyon Coffee has evolved into a full-service café known for its warm, inviting spaces.
Canyon Coffee isn’t just about great coffee; it’s about creating a sense of connection and joy in life’s meaningful, everyday moments. As Ally and Casey share on their website, “We believe in fostering moments, environments, and relationships built around respect, kindness, and empathy.” This ethos shines through in each cup they craft, inviting people to slow down, connect, and savor.

Process: Washed
Variety: Mixed Heirloom
Tasting Notes: Peach, Persimmon, Lime, Oolong Tea, Bergamot
Description: The cup is deliciously sweet and round, with a smooth lime-like acidity. The team says that the broadest note they tasted in this coffee hearkened to fuyu persimmons — Ally’s favorite fruit. They also loved the ripe persimmon note for its developed autumnal sweetness, which is almost honey-like.

The team loves pairing this vibrant coffee with a pastry, but it also shines as the base for a refreshing iced drink. For a twist, try it with a touch of honey, poured over ice to create a bright and flavorful iced latte—perfect if you prefer a cool sip over a straight espresso shot!

Canyon chose the Sagebrush blend at a cupping and were impressed with its sweet, clear flavor while still maintaining the creamy body that they love. That impressive taste is a quality of coffees sourced from the higher elevations of 1700-2100 range. This coffee is also Regenerative Organic Certified(ROC) and Canyon holds one of the first roasts with this certification! In short ROC certification takes into account not only plant health but also soil health, animal welfare and worker equity. With this ROC certified coffee they are contributing to carbon neutrality.
