This month we are happy to share KOS Coffee with you, a specialty coffee roaster based in sunny Maitland, FL! They pride themselves on sourcing the best coffees in the world and highlighting the farmers that produced them. Colombia Rodrigo Sanchez
Origin: Huila, Colombia

Tasting Notes: Cacao Nib, Almond, Green Apple
Description: This beautiful washed coffee hails from producer Rodrigo Sanchez from Finca Monteblanco high in the mountains above Pitalito in Huila, Colombia. Not only is this a Single Producer coffee, but also a single varietal coffee making it a truly unique and rare coffee to enjoy. We love this coffee due to its versatility and flavor profile. We taste crisp green apple with long lasting milk chocolate and cacao notes.
Brewing Recipe:
Dose: 15g I 20g I 22g
Time: 22 s I 28 s I 34 s
Yield: 38g I 50 g I 55 g
Temperature: 209 F
Pressure: 9 Bar
KOS understands that not all of us use the same size portafilter baskets, so they’ve included recipes for 15g, 20g, and 22g baskets. They prefer a longer “Nordic” style espresso shot. Their favorite recipe for Rodrigo’s coffee is 20g in, 50g out, and 28 seconds. KOS says “We find that this recipe gives you a smooth, yet bold espresso shot where the tasting notes of Cacao and crisp green apple are highly present.”
Ethiopia Koke Washing Station
Origin: Yirgacheffe, Ethiopia
Producer: Various Smallholder Producers
Elevation: 1800 MASL
Process: Washed
Variety: Kurume, Dega, Wolishu
Tasting Notes: Brown Sugar, Black Tea, Stone Fruit
Description: The Koke washing station is named after the town where it is located in the Yirgacheffe district of the Gedeo Zone. Built in 2011, this is a family-owned washing station, sitting at over 1800 MASL, and is maintained by (96) small scale farmers who provided cherries for this harvest.
This washed process brings out clean and bright notes of black tea, brown sugar, stone fruit, and citrus, which creates a clean bodied cup.

Yield: 40g I 48.5 g I 53.25g
Temperature: 205 F
Pressure: 9 Bar

Their favorite recipe is 22g in, 53.25g out, and 35 seconds for this coffee. KOS says “In our opinion this recipe gives you a creamy, rich espresso shot where the vibrant, floral and fruity tasting notes present themselves.”
