Civil Coffee is and has always been a testament to brotherly love. A story of two siblings chasing something bigger than themselves, one cup at a time. What began over ten years ago as a humble pursuit of better coffee has grown into a movement, connecting people through moments of hospitality and quality.

Raised in Los Angeles and proudly Mexican, brothers Alan and Alex grew up with coffee in their home. Their earliest memories include café de olla or what they affectionately called a “brute latte”—Folger’s instant coffee mixed with milk and sugar. But everything shifted when Alan first tasted an espresso made with Mexican coffee. Full of brightness, complexity and untapped potential was the cup that started it all.

To Civil, coffee is more than a beverage. It’s a bridge between cultures, a way to honor roots and uplift the producers, families, and traditions behind every bean. Civil’s roasting program is committed to sourcing at origin, and exclusively roasting and serving Mexican coffee—celebrating the vibrant terroir, history, and people that make it so special.

Whether you’re pulling shots on a La Marzocco at home or visiting one of Civil’s cafés in L.A., you’re part of the story too. A story born in México, roasted in L.A., and meant to be shared.

LA UNION ESPRESSO

Process: Anaerobic (fermentation in plastic tanks & Natural processed-36 hour) / Washed

Description: La Unión MX Espresso is a blend that captures the future of Mexican specialty coffee -bridging heritage with innovation. Sourced from the highlands of Guerrero and Oaxaca, it showcases the depth, vibrancy, and sweetness that define Mexico’s finest lots. A true unión of varieties, regions, and processing styles from across the Estados Mexicanos.

Crafted with a balance of 70% anaerobic natural and 30% washed coffees, this blend delivers layered fruit intensity with clean structure. Expect a syrupy, caramelized shot full of jammy brightness. It’s bold enough to stand on its own, yet velvety and balanced enough to shine con leche.

Roasted for ristretto-style espresso, La Unión is an expression of Mexico’s evolving terroir and the producers driving its coffee forward. It’s Alex’s go-to espresso profile—a blend with carácter: rooted in tradition, roasted for today.

Description: The Everyday Cafecito. Some coffees take you places. Others bring you home. Civilian is Civil Coffee’s ode to the cafecito – those morning cups shared with the Morales family, where coffee was more than just a drink; it was a ritual. Sourced from Oaxaca, Chiapas, and Veracruz, this blend is crafted for daily comfort, delivering warmth, familiarity, and balance in every sip.

Built on Mexico’s most time-honored coffee varieties(Typica, Bourbon, Caturra, and Mundo Novo) each bean contributes to a cup that is smooth, structured, and deeply satisfying. The meticulous washed process refines acidity, enhances sweetness, and ensures a crisp, clean finish. This is Civil’s most developed profile of Calidad—sweet, deep, and full of character, yet never roasty or bitter. Perfect for slow mornings, family gatherings, or simply savoring with a favorite concha.

Civilian is the result of a year-long journey that Alan, Civil’s green buyer, spent sourcing, building, QC’ing, and refining. Civilian is meant to be enjoyed however it’s brewed, black, con leche, or however feels like home.
