A JOURNEY. A BUISNESS. A FAMILY LEGACY.

Chloé Cà Phê & Roastery: Vietnam’s Rarest Coffees in Sacramento

At Chloé Cà Phê & Roastery, they believe that every cup tells a story. For them, that story begins in Vietnam—the world’s second-largest coffee producer, yet still an underdog in the global specialty market. September’s La Marzocco Home Espresso Subscription brings you two coffees that rarely leave Vietnam, but are now in Sacramento: Coffea Canephora (Fine Robusta) and Coffea Liberica.

This is more than a tasting, it’s an invitation to reimagine what Vietnamese coffee can be.

Why Vietnam? Why Now? For decades, Vietnamese coffee has been overlooked in the specialty world. But at Chloé Cà Phê & Roastery, their mission is to change that. They work directly with farmers in Vietnam(families who have cultivated coffee for generations) paying above fair-trade prices to ensure their craft is respected and sustained.

By focusing on rare and heritage varietals like Coffea Liberica (native to Southeast Asia, with striking floral and jackfruit notes) and Coffea Canephora (known as Robusta, but here cultivated at specialty-grade with deep cocoa and tropical fruit complexity), they are rewriting the narrative of Vietnamese coffee.

The Coffees You’ll Receive

Coffea Canephora (Fine Robusta) – Bold and smooth, with rich cocoa undertones and hints of ripe mango and sugarcane. This is not the bitter Robusta you may know; it’s meticulously cultivated and roasted to highlight sweetness, balance, and crema that lingers luxuriously on the palate.

Coffea Liberica – A coffee unlike any other. Expect a syrupy body, bright tropical acidity, and aromatic notes of lychee, jackfruit, and wildflower honey. In the cup, it’s both exotic and grounding; a reminder of Vietnam’s biodiversity.

Together, these coffees showcase Vietnam’s capacity for nuance, depth, and distinction; proof that specialty is not defined by geography, but by dedication.

Brewed in Sacramento, Rooted in Vietnam. Every bag is roasted at their café and roastery in Midtown Sacramento, where community, craft, and culture intersect. Chloé Cà Phê & Roastery is named after their daughter; their reminder that this work is about legacy, heritage, and future generations. By bringing these coffees to the La Marzocco Home community, they are sharing not just beans, but the heart of Vietnam.

Brewing Recipe
Dose: 18 Grams
Time: 30 Seconds
Yield: 36 Grams
Temperature: 201 F
Pressure: 9 Bar

Traditionally brewed with a Vietnamese phin, this Fine Robusta is a staple of Vietnam’s coffee culture. With nearly double the caffeine of Arabica and a naturally rich crema, it’s the perfect base for milk drinks—delivering bold flavor, smooth balance, and silky texture for beautiful latte art.

COFFEE LIBERICA

Origin: Hướng Phùng, Hướng Hóa District, Quảng Trị Province, Việt Nam
Producer: 96b Liberica Project
Elevation: 600 MASL
Process: Anaerobic Natural
Variety: Liberica
Tasting Notes: Napa Valley – Cabernet Sauvignon & Peach Cobbler
Description: Securing a partnership with 96B was no small feat. As a small roastery without the resources of a global brand, we had to fight tooth and nail to earn their trust. But the result is something truly extraordinary: a Liberica you won’t often see outside of competitions or world stages.

This is the very same variety that helped Christos Sotiros win the 2024 Swiss Barista Championship, and that **Ti Phan—Vietnam’s first Brewers Cup Champion—**featured in his 2025 World Brewers Cup routine in Jakarta. Even Blue Bottle has showcased 96B’s Liberica at their Studio cafés in Kyoto and Seoul, signaling its role in the future of coffee.

Brewing Recipe
Dose: 18 Grams
Time: 30-32 Seconds
Yield: 36 Grams
Temperature: 201 F
Pressure: 7-9 Bar
Pre-infusion: None – Or try with on for fun. We enjoy 4 on 4 off.

This Liberica shares a similar density to Fine Robusta, yet it’s an entirely different species from both Robusta and Arabica. It opens the door to a unique coffee drinking experience. We encourage you to experiment, but try pulling a slightly longer, smokier, and silkier shot: you’ll uncover a flavor reminiscent of peach cobbler, it’s sweet, layered, and just a touch savory.
